Strawberry Pretzel Ice Cream Pie


Strawberry Pretzel Ice Cream Pie is made with only 4-ingredients, is so delicious with a salty pretzel crust and ice cream mixed with fresh strawberry sauce for the perfect dessert!

I wanted to make a dessert that was slightly healthier, perfect for summer and of course, delicious! I brainstormed what I would be most excited to see at a summer gathering and decided on this Strawberry Pretzel Ice Cream Pie. Oh, it is so good! Made with Michigan strawberries which are so sweet and juicy, this dessert is sure to be a favorite this summer. It’s a take on the classic strawberry pretzel salad that is popular at potlucks.

Why buy Michigan produce? 

This is a passion topic of mine because I LOVE all things Michigan produce. My parents have a farm in the thumb of Michigan and if you’ve been following me for awhile, you know that we spend a ton of time there. There is a lot of produce that grows there and I am obsessed.

Michigan farmer’s markets are amazing as well. We love shopping at Eastern Market in Detroit on Saturday mornings and buying a variety of produce. The produce always tastes better and fresher at a farmer’s market. If you haven’t been, I highly recommend Eastern Market.

Michigan also produces so much produce! We are truly lucky. Michigan is well known for its apples, cherries, cucumbers, asparagus, potatoes, celery, onions, tomatoes, peppers, strawberries, blueberries and more. I feel so blessed that when we visit the farmer’s market, we can easily find all of these incredible locally grown foods.

Eating locally grown food is very nutritious as well! Of course, fresh fruit and veggies are packed with vitamins, minerals and fiber already. When you eat locally grown produce, it is often more nutritious because it is fresher and most likely picked more recently and has retained more of its vitamins and minerals. If you haven’t been fruit picking before, I highly recommend looking up U-Pick farms near you as it is such a fun activity. We try to make it out fruit picking at least once per year and my kids love it!

Strawberry Pretzel Ice Cream Pie Ingredients

  • Fresh strawberries
  • Vanilla ice cream or frozen yogurt (or strawberry)
  • Pretzels
  • Butter

Healthy Strawberry Pretzel Ice Cream Pie

How to Make Strawberry Pretzel Ice Cream Pie

This fun pie is so easy to make! Just mash up chopped strawberries with a fork or in a food processor or blender. Mix in with the ice cream. You can use either vanilla ice cream or yogurt or strawberry. Meanwhile, in a food processor, blend the pretzels and butter until it sticks together when pinched. Leave the pretzels in small pieces (do not overblend). 

Press the pretzels on the bottom of a pie pan or cake pan and top with the strawberry ice cream saving a couple tablespoons. Top with fresh strawberries and pretzel crumbs. Freeze until firm. When you’re ready to eat, cut into pieces and enjoy. It may need a few minutes to thaw before eating if it is frozen solid.

Yield: 8 slices

Strawberry Pretzel Ice Cream Pie is made with only 4-ingredients, is so delicious with a salty pretzel crust and ice cream mixed with fresh strawberry sauce for the perfect dessert!

Prep Time: 10 minutes Freeze time: 1-2 hours Total time: 1-2 hours + 10 minutes

INGREDIENTS

  • 3 cups pretzels
  • 1/4 cup butter, melted
  • 4 cups vanilla ice cream or frozen yogurt
  • 1 1/2 pounds strawberries

INSTRUCTIONS

  1. In a food processor, blend together the pretzels and butter leaving the pretzel in small bits. Blend until when you press down on the mixture, it lightly sticks together. 
  2. Press the pretzel mixture on the bottom of a pie dish saving a few tablespoons for the topping.
  3. In the food processor, blend 1 cup of strawberries. Mix in the ice cream.
  4. Press the ice cream mixture into the crust with a spatula and smooth it out.
  5. Slice the rest of the strawberries thinly and top the pie with them. Sprinkle with the rest of the pretzel mix.
  6. Freeze until firm and cut into pieces. If the pie is frozen solid, allow it to thaw for 5-10 minutes before serving.
