Here’s my amazing potato salad recipe. It’s vegan, and bloody delicious. You’ll need:
organic potatoes (skin on)
celery
spring onion
dill
mint
parsley
mustard
chilli
a little vegan pesto
vegan mayo
olive oil
lemon juice
crushed jalapeños on top.
Cut the potatoes into wedges. Leave the skin on, boil them. Finely chop the herbs and celery. Toss in with potatoes. Dress it with olive oil and plenty of fresh lemon juice, mayo, pesto and mustard. Bob’s your uncle.
My tips:
Try a mix of normal potato and sweet potato.
Add a heap of hummus on top for extra protein, it packs a punch and tastes great.
