Sonya’s Potato Bake Recipe

Seriously you must try this potato bake recipe, it’s a crowd favourite. If I did it again I’d swap the mustard for horseradish.

HERE’S WHAT YOU NEED:

  • 10 large potatoes, peeled and sliced in a mandolin or very thinly sliced.
  • 2 cups cream
  • 1–2 heaped tbsp mustard
  • Salt & pepper to taste
  • A handful of finely chopped dill
  • A small handful of thyme
  • 1 cup cheddar cheese
  • 1 cup parmesan
  • 6 garlic cloves
  • Sprinkle of paprika on top

 

HOW TO MAKE IT:

  • Layer the potato slices upright in your baking dish
  • Pour over the creamy, cheesy, herby mixture
  • Cover and bake at 170°C (340°F) for 1 hour
  • Uncover and bake for another 20 mins until golden and crisp
  • Serve with a generous squeeze of lemon
