An easy one pot family meal recipe; gnocchi with three hidden vegetables topped with mozzarella cheese.

If you’re easing yourself gently back into family meals after the Christmas chaos then this is a great recipe to start with.
A simple gnocchi packed with veggies and all cooked in under 30 minutes in one pot. Winner!

Hidden Veg Gnocchi Recipe
The full recipe with all ingredients and measurements is towards the bottom of this blog post but I’ve also included some step-step-step images here in case that is helpful.
This is the Mini Chopper I used to blitz the veg. I love it as its so much smaller than a big food processor so much easier to whip out and clean when you want to finely chop or blitz just a small amount of veg.

- Blitz carrots, courgette and red pepper in a food processor or mini chopper.

- Add to a large frying pan with onions and garlic and fry gently for a few minutes.

- Add a tin of chopped tomatoes, vegetable stock, gnocchi and herbs. Bring to the boil and simmer for 12 minutes.

- Remove from the heat and stir in some creme fraiche.
The final step is to top with grated cheddar and grated mozzarella and pop under the grill for a few minutes to melt and brown the cheese.

Absolutely delicious and ready in under 30 minutes – a brilliant family meal!

Description

- 1 large carrot
- ½ medium courgette
- ½ red pepper
- 1 onion, diced
- 2 garlic cloves, crushed
- 1 tbsp oil
- 1 tin chopped tomatoes
- 250ml vegetable stock
- ½ tsp dried oregano
- ½ tsp smoked paprika
- Salt and pepper
- 500g gnocchi
- 2 tbsp creme fraiche
- 50g grated cheddar cheese
- 50g grated mozarella
Instructions
- Cut the carrot, courgette and red pepper into large chunks and add to a chopper or food processor. Blitz until the veggies are cut into very fine pieces.
- Add to a large frying on the hob along with the onion, garlic and oil.
- Fry for 5-6 minutes until the veggies are soft.
- Add the chopped tomatoes, vegetable stock, oregano, smoked paprika, a little salt and pepper and the gnocchi.
- Stir well, bring to the boil and simmer on low for 12 minutes.
- Remove from the heat and stir in the creme fraiche.
- Add the grated cheddar and mozzarella on top and pop the pan under the grill for a couple of minutes to brown the cheese.
Notes
Leftovers can be kept in an airtight container in the fridge for up to 2 days and reheated in the microwave.
This recipe can also be frozen for up to 2 months. Defrost overnight in the fridge and reheat as above.
