Cinnamon Apple Breakfast Crepes — Christy Wilson Nutrition



Cinnamon Apple Breakfast Crepes with Fiber One™

Prep: 30 minutes
Total: 90 minutes (including chill time)
Serving: 2 crepes 
Yield: 8 crepes

Ingredients

For the crepes:

  • 2/3 cup Fiber One™ Original cereal, crushed

  • ½ cup all-purpose flour

  • 1 cup 1% milk

  • ½ cup water

  • 2 large eggs

  • 2 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt

 For the apple filling:

  • 1 teaspoon unsalted butter

  • 3 granny smith apples (about 1½ pounds or 3 cups), half-peeled in ribbons, chopped

  • 2 teaspoons lemon juice

  • 1½ tablespoons brown sugar

  • ½ teaspoon ground cinnamon

Directions

To prepare crepes:

Step 1
Add all ingredients for the crepes into a blender (Fiber One™ through salt). Blend on high for about 30 seconds. Place the crepe batter in the refrigerator for 1 hour (or up to 48 hours). This allows the bubbles to subside so the crepes will be less fragile during cooking. 

Step 2
Heat an 8 or 9-inch non-stick pan over medium heat. Add butter or vegetable spray oil to coat. 

Step 3
Pour ¼ cup of batter into the middle of the pan, take the pan off the burner and swirl the batter to spread evenly. Cook for 30 seconds to one minute, or until the edges look dry and lacy and the center is a golden brown, then flip. Cook for an additional 10-30 seconds and place onto a plate to cool.  

Step 4
Continue Step 3 until all batter is gone. After crepes have cooked, stack them and store in an air-tight container or sealable bag. Crepes can be stored in the refrigerator for about 5 days or in the freezer for 2 months.

To prepare apple filling: 

Step 1
Peel apples in ribbons, keeping about ½ of the peel intact. Core and cut apples into about 1-inch cubes. Add lemon juice and mix, coating apples with the juice.

Step 2
Melt butter in a large skillet over medium-high heat. Add apples and let them cook without stirring for the first minute or two. Next, add brown sugar and cinnamon and stir to coat. Sauté apples until soft, about 5-7 minutes. 

Step 3 
To assemble, place prepared crepes on a plate and add about ¼ cup of cooked apples to each one. To serve, roll or fold into triangles. Top with a sprinkle of powdered sugar and/or cinnamon. 

Tips: Additional options (not included in nutrition facts) include serving these along with yogurt or cottage cheese. You can also top with chopped nuts and whipped cream.
