Growing up, one of my favorite drinks my mom would make us was horchata. Traditionally, this is a soaked and blended rice milk drink that is sweetened and flavored with vanilla and cinnamon. Making horchata from scratch is pretty labor intensive (thanks for the recipe, Mom!), but in the end, you have a sweet, creamy and refreshing cold drink! Because I love all things horchata, I experimented with Almondmilk Horchata in a cooked rice pudding (arroz con leche) recipe and….wow! So much flavor and so few ingredients. This arroz con leche recipe was devoured by my biggest food critics (my kids!) who immediately asked for a seconds. To further enhance the almond flavor, I toasted up some sliced almonds to topped this dessert. Hope you enjoy this recipe as much as my family and I did!
