Tasty sausage rolls packed with apple and carrot and made using tortilla wraps. No pastry required! Great for school lunchboxes or lunch at home.

These sausage rolls make a great alternative to sandwiches in a lunchbox. They’re easy to make, using tortilla wraps instead of pastry. And brilliant for batch cooking and freezing too.
You can use any type of sausages for this recipe. I used pork sausages here but chicken, turkey or even vegetarian sausages will work really well too.

How To Make Apple & Carrot Sausage Rolls
The full recipe with all ingredients and measurements is in the recipe card to the end of this blog post but I’ve included some step-by-step images here that you might find helpful.

- Remove the skins from the sausages and add them to a bowl with grated apple and carrot.

- Add half the mixture to a large tortilla wrap and roll it up tightly.

- Ensure the fold of the wrap is at the bottom then cut into 6 sausage rolls.

- Place them on a baking sheet and brush with milk or beaten egg.
Then bake in the oven for 20-25 minutes until golden brown.

Storing & Freezing
These sausage rolls will keep in the fridge for up to 3 days. They can be eaten cold or reheated in the microwave or airfryer.
They can also be frozen for up to 2 months. Defrost in the fridge overnight.

Description

Ingredients
- Spray oil
- 400g sausages
- 1 small carrot
- 1 small apple
- 2 large tortilla wraps
- 1 tbsp milk or 1 egg
Instructions
- Preheat the oven to 200c and line a baking tray with parchment paper.
- Spray a little oil over the parchment paper.
- Remove the skins from the sausages, add to a bowl and mash the sausage meat with a fork.
- Grate the carrot and apple (you can leave the skin on the apple) and add these to the bowl.
- Mix everything together well.
- Add half of this mixture to one of the tortilla wraps, placing it slightly right of the centre of the wrap.
- Roll up the wrap as tightly as you can, ensuring you finish so that the seal of the wrap is at the bottom.
- Cut the ends off the wrap then cut into 6 sausage rolls.
- Repeat with the remaining mixture and the other tortilla wrap.
- Place the 12 sausage rolls on the baking tray and brush with a little milk or beaten egg.
- Bake in the oven for 20-25 minutes until golden brown.
