This vibrant, colourful dish of goodness is definitely needed on dark, cold mornings! High in fibre, packed with flavour, making use of seasonal fruit and great to eat either hot or cold, make a bit batch and there you go – a healthy breakfast (or snack!) ready for the week ahead. You can make this dairy-free / vegan by using non-dairy milks, or gluten-free oats should you need to.


Ingredients:
- 150g oats
- 30g cocoa powder
- 3 tablespoons sweetener
- 2 tablespoons chia seeds
- 300ml oat milk
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon coconut oil
- 2 tablespoons brown / coconut sugar
- 1 teaspoon cinnamon
- 4 figs, halved
- 1 large apple, sliced
- 1 orange, sliced then halved


Make it!
- Mix together the oats, cocoa powder, sweetener and chia seeds in a bowl.
- Pour in the milk, maple syrup and vanilla and mix well again, then pour into a greased oven-proof dish and spread out.
- Heat the coconut oil and 1 tablespoon of the sugar in a pan then add the apples, figs and cinnamon and cook for 5 minutes. Add the orange slices and cook for a further few minutes.
- Arrange the fruit on top to cover, then sprinkle over the sugar. Bake at 180C for 25 minutes until golden and caramelised, Enjoy hot or cold.
