This nourishing mini-meal delivers all the comforting flavors of Chicken Parmesan with more protein and less fat. Its creamy, casserole-like texture offers cozy satisfaction in a bowl. Enjoy it on its own, over low-carb pasta, or spooned into roasted spaghetti squash halves. To change things up, try adding chopped broccoli instead of baby spinach.

Ingredients

  • ½ cup low-fat cottage cheese
  • 3 tablespoons marinara sauce
  • 2 tablespoons shredded part-skim mozzarella or reduced-fat cheddar cheese
  • ½ cup baby spinach, roughly chopped
  • ½ teaspoon Italian seasoning or dried oregano
  • A few pinches garlic powder
  • ½ cup chopped rotisserie or cooked chicken
  • 1 tablespoon grated Parmesan cheese, optional

Instructions

  1. Place the cottage cheese, marinara sauce, shredded cheese, spinach, Italian seasoning, and garlic in a microwave-safe bowl. Stir to combine and heat for 30 seconds in the microwave.
  2. Stir in the chicken and microwave until heated through, about 1 more minute. Top with Parmesan cheese, if desired.
