If your child is a fan of pot noodles, try this homemade version for their lunchbox. So much healthier and a great hot lunch idea to send to school

Pasta, soups and stews are all great ideas to add to a food flask for a hot lunch for the kids. But if you’re looking for something a bit different then try these Chicken Noodles. Ready in just 6 minutes, they’re perfect to whip up in the morning before school.
As with all my Hot Lunch Ideas, it’s important to pre-heat the food flask by filling it with boiling water, adding the lid and leaving for 10-15 minutes.

How To Make Chicken Noodles for Lunchboxes
The full recipe with ingredient measurements is in the recipe card towards the bottom of this blog post but I’ve also included some step-by-step photos here that might be helpful.

- Add the noodles to a saucepan of boiling water and cook accordingly to the package instructions.

- Mix chicken stock and cornflour together and whisk with a fork to ensure there are no lumps.

- Add this to a small frying pan with the soy sauce, frozen peas and corn and diced cooked chicken.

- Add the drained noodles and mix well.
Immediately pour the boiling water out of the food flask and add the noodles. Close the lid quickly to retain the heat.

Ingredients
- 40g dried egg noodles
- 120ml chicken stock
- 1 teaspoon cornflour
- 0.5 tablespoon soy sauce
- 60g frozen peas & corn
- 50g cooked chicken
Instructions
- Preheat the food flask by filling with boiling water and leaving with the lid on for 10-15 minutes.
- Add the noodles to a saucepan of boiling water and cook accordingly to the package instructions.
- Meanwhile mix the stock and cornflour together and whisk with a fork to ensure there are no lumps.
- Add this to a small frying pan with the soy sauce, frozen peas and corn and diced cooked chicken.
- Cook for 3-4 minutes until everything is piping hot.
- Add the drained noodles and mix well.
- Pour the boiling water out of the food flask and add the chicken noodles, closing the lid quickly to retain the heat.
