  • Use old-fashioned oats. If you only have old-fashioned oats on hand, you can blitz them in your food processor to chop them and then measure out 2 cups. (Don’t skip the chopping, or your cookies won’t stick together as well.)
  • Switch up the add-ins. Try chopped walnuts, pecans, or dried cranberries instead of the mini chocolate chips.
  • Don’t skip resting before serving. The cookies will continue to set during this time. If you eat them fresh out of the oven, they’re likely to fall apart!

  2. To large bowl add banana, brown sugar, honey, egg and vanilla. Using a spatula mix everything together.
  3. Next add in oats, cinnamon and salt. Mix to incorporate everything.
  4. Lastly, add chocolate chips and mix until everything is well combined.
  5. Line a baking sheet with parchment paper or a silicone mat.
  6. Using an ice cream scoop about 2 tablespoon, scoop batter and place on prepared baking sheet. Keep them about an inch apart. They don’t spread to much.
  7. Baked for 12-15 minutes until the tops are just set.
  8. Remove from oven and let rest on a baking rack for 5-10 minutes before eating. Serve.
